Ingredients

Fresh Strawberries 500g
Granulated Sugar 2 cups
Water 1 cup
Bamboo Skewers
Candy Thermometer

Step 01
Rinse and pat 500g of fresh strawberries dry with a paper towel. Remove all moisture to prevent sugar crystallization.
Step 02
Insert a bamboo skewer into each strawberry and prepare a bowl of ice water. Set it aside.
Step 03
Combine 2 cups of granulated sugar and 1 cup of water in a saucepan. Heat over medium-high, using a candy thermometer to monitor the temperature.
Step 04
Once the sugar mixture reaches 300°F (hard crack stage), immediately turn off the heat.
Step 05
Carefully dip each skewered strawberry into the sugar syrup, avoiding the stems, then briefly swirl it in the iced water.
Step 06
Place dipped strawberries into a styrofoam block to drain excess water. Serve immediately for maximum crunch. Avoid leaving for long, as the sugar will become sticky over time.
