End your holiday feast on a refreshing note with these creamy, no-bake mini cheesecakes. Bursting with tropical flavour and festive cheer, they’re sunshine in every bite.

Ingredients
Digestive Biscuits 150g
Butter 75g
ZESPRI SunGold Kiwis 6
Cream Cheese (at room temperature) 280g
Icing Sugar 100g
Whipping Cream 150ml
Lime (zested and juiced) 1
Fresh Mint Leaves To garnish
Cooking Method
Step 01
Crush the digestive biscuits into fine crumbs and transfer to a bowl.
Step 02
Melt the butter over low heat, then pour it over the crumbs and mix well.
Step 03
Press the mixture firmly into the base of a greased or lined muffin tin. Refrigerate for 1–2 hours until firm.
Step 04
Blend two ripe kiwis with lime juice until smooth.
Step 05
In a mixing bowl, beat the cream cheese and icing sugar until smooth, then stir in the blended kiwi mixture.
Step 06
Whip the cream until soft peaks form, then gently fold into the cream cheese mixture. Taste and adjust with extra lime juice if desired.
Step 07
Spoon the cheesecake mixture over the chilled biscuit bases and smooth the tops. Chill until ready to serve.
Step 08
Before serving, slice the remaining kiwifruit and decorate the cheesecakes with kiwi stars or slices. Sprinkle with lime zest and garnish with mint leaves.
