Ingredients
Pineapple tidbits, drained (reserve juice) 400g (reserve 160ml juice)
Cold milk 480ml
Instant vanilla pudding mix 96g total
Sour cream 240ml
Mandarin oranges, drained 310g
Angel food cake, prepared and cut into 2.5cm cubes 1 cake (225–280g)
Frozen whipped topping, thawed 240g
Orange extract 1/2 tsp
Sweetened shredded coconut, toasted 30g
Cooking Method
Step 01
In a large bowl, whisk together the milk, reserved pineapple juice and pudding mixes for 2 minutes. Let stand for 2 minutes until soft-set.
Step 02
Whisk in the sour cream, then fold in the drained pineapple and mandarin oranges.
Step 03
In a 3 litre trifle bowl, layer a third of the cake cubes, followed by a third of the pudding mixture. Repeat layers twice more.
Step 04
Cover and refrigerate for at least 3 hours to allow the flavors to meld.
Step 05
Combine the thawed whipped topping with the orange extract and spread over the top of the trifle.
Step 06
Sprinkle with toasted coconut before serving.
