A festive showstopper that pairs rich chocolate mousse with the vibrant sweetness of dragon fruit for a tropical twist this Christmas.

VIETNAM White Dragon Fruits 2
Dark Chocolate Mousse Powder Mix 200g
White Chocolate Mousse Powder Mix 200g
Full Cream Milk 500ml
Dragon Fruit Flavour Syrup 15ml
Round Chocolate Pastry Tart Shells 6
Cooking Method
Step 01
Combine the dark chocolate mousse mix, 250ml milk and dragon fruit syrup in a stand mixer. Mix until smooth, transfer to a piping bag fitted with a round tip and refrigerate for 2 hours.
Step 02
In a separate bowl, mix the white chocolate mousse powder with the remaining 250ml milk. Transfer to a piping bag fitted with a fluted tip and chill for 2 hours.
Step 03
Halve dragon fruits lengthwise and scoop out the flesh. Slice one half into thin half-moons. Slice the remaining half into thicker rounds and cut out small heart shapes.
Step 04
Pipe alternating swirls of dark and white chocolate mousse into each tart shell.
Step 05
Arrange dragon fruit slices around the outer edge for a striking contrast.
Step 06
Finish with dragon fruit hearts on top and serve immediately.
