Sweet, tangy, and totally irresistible, this Lychee Lime Sorbet is a tropical escape in every scoop! Made with juicy lychees and zesty lime, it’s the perfect way to cool down on a hot day!

Ingredients

Fresh lychees (peeled and pitted) 750g
Water 150ml
Caster Sugar 80g
Egg White 1
Zest from 2 limes
Cooking Method
Step 01
In a saucepan, combine water and caster sugar. Heat gently until the sugar dissolves. Bring to a boil, simmer for 1 minute, then remove from heat and cool completely.
Step 02
Blend the peeled and pitted fresh lychees (750g) in a food processor until finely chopped. Add the cooled syrup and the juice of 1 lime while blending. Pour the mixture into a 1-litre container and freeze for at least 6 hours, or until solid.
Step 03
Break up the frozen mix and return it to the food processor. Add the egg white and zest from 1 lime, then blend until thick, pale, and smooth. Transfer back to the container, cover, and freeze overnight.
Step 04
Scoop the sorbet into bowls and garnish with extra lime zest. For an added touch, serve with a few fresh lychee halves. Enjoy this light and refreshing treat!
