Cooking Method
Step 01
Split the vanilla pod in half lengthwise, scrape out the seeds and set aside
Step 02
Mash the banana with the brown sugar to form a purée, then add the eggs one by one. Gradually mix in the corn oil until the purée becomes smooth without lumps, then add the milk, orange zest and scraped vanilla seeds.
Step 03
Combine all the dry ingredients in a mixing bowl: the cashew nuts, salt, bread flour, baking powder, cinnamon, milk chocolate drops and mace. Add the banana purée and mix until the batter is smooth and has a ribbon-like texture.
Step 04
Pour the batter into a cake tin (20cm x 8cm x 7cm) and bake in an oven preheated to 160°C for 35 minutes, reduce to 155°C and continue cooking for a further 10 minutes. Remove from oven and cool for 10 minutes. Remove the mould, cut into slices and serve with ice cream (optional).
