Ingredients
Fresh strawberries
1 pint
Semi-sweet chocolate chips
3/4 cup
Cream cheese (softened)
220g
Sugar
1/4 cup
Butter (softened)
2 tbsp
Vanilla essence
1 tsp
Unsweetened cocoa powder
1 1/2 tbsp
Whipped cream/topping
1 cup
Chocolate chips
3 tbsp
Chocolate cookie crumbs
3 tbsp
Cooking Method
Chocolate Cheesecake Stuffed Strawberries Base

Step 01

Wash strawberries well and let them dry.
Step 02
Cut the tops off the strawberries and use a small spoon to hollow them out.
Step 03
Melt the chocolate chips on medium heat for about 20 seconds, then turn up the heat every 15 seconds until the chocolate is melted.
Step 04
Flatten the bottom of each strawberry by slicing off a thin piece. When the strawberries can stand upright, pat them dry with a paper towel. Dip the bottom of each strawberry into chocolate and then into the cookie crumbs. Place on a pan lined with parchment paper.
Chocolate Cheesecake Filling
Step 01
Melt the semi-sweet chocolate chips on medium heat for about 35 seconds, then turn up the heat every 20 seconds until the chocolate is melted.
Step 02
Run the mixer on medium to combine cream cheese, butter, vanilla, cocoa powder and sugar. Once fluffy, add in cooled chocolate and mix on low until smoothly combined. Add in whipped topping and mix well.
Step 03
Place chocolate cheesecake filling in a Ziploc bag. Pipe filling into the strawberries.
Step 04
Top with an additional piece of strawberry and serve immediately or refrigerate up to 4 hours.

Replace the chocolate chips with 3 tablespoons of melted white chocolate for a smooth, luscious delight.
