Pineapple Square Tarts

Ingredients
Butter (unsalted)
226g
Shortening
½ tbsp
Egg
1
Icing sugar
2 tbsp
Pineapple essence
1 tsp
Cornflour
2 tbsp
Milk powder
2 ½ tbsp
All purpose flour
3 cups
Pineapple, peeled, cored and diced

Granulated sugar
¾ cup
Maltose sugar (optional)
½ cup
Cooking Method

Step 01

Place pineapple in food processor and blitz until it is pureed.
Step 02
Stop and scrape the sides of the bowl occasionally.
Step 03
Cook it until the liquid has evaporated.
Step 04
Reduce the heat. Add sugar, cook until it thickens.
Step 05
Add in the maltose sugar. Cook for 12 minutes.
Step 06
Transfer mixture to a shallow bowl and refrigerate until cool.
Step 07
Cream butter, icing sugar and shortening for approximately 10 minutes.
Step 08
Add in the egg and essence, as the whisk is running.
Step 09
Remove from whisk and fold in the flour, corn flour and milk powder. Place the dough in the refrigerator for 15 minutes.
Step 10
Divide dough into approximately 20-30 pieces and flatten each.
Step 11
Place a teaspoon of the pineapple filling in the center of the dough.
Step 12
Press into square mold and bake it at 180℃ for 20 minutes.
Step 13
Turn it around to bake for another 10 minutes, or until it browns.


Fun fact: Pineapple sounds like “prosperity arrives” in several Chinese dialects hence pineapple tarts are considered ‘good luck food’ in Chinese culture.
