Persimmon Panna Cotta

These unique fruits carry honey-like flavours with slight spicy notes!

Ingredients
Persimmons, whole 2
Sugar 2 tbsp
Heavy cream 600ml
Caster sugar 2 tbsp
Cinnamon powder ¼ tsp
Gelatine leaves 5g
Cooking Method

Step 01 Scoop out persimmon flesh. Discard the skin and seeds, if any.
Step 02 Place the persimmon flesh and caster sugar in a blender. Mix until smooth. Set aside.
Step 03 Soften gelatin leaves in cold water. Set aside.
Step 04 In a saucepan, bring heavy cream, caster sugar, cinnamon, and vanilla extract to a simmer. Do not boil.
Step 05 Remove from heat and immediately stir in gelatine. Whisk to combine.
Step 06 Pour the mixture into serving glasses and chill in the refrigerator until they set. Once set, pour the persimmon mixture over.
Step 07 Chill in the refrigerator again for an hour before serving. Enjoy!
