Ingredients
Filling
Olive oil 50ml
Large onion 1
Beef mince 650g
Tomato purée 2 tbsp
Plain flour 1 tbsp
Red wine 150ml
Fresh thyme, leaves only 4 sprigs
Beef stock 400ml
Worcestershire sauce, to taste
Salt and freshly ground black pepper
  
For the mash
Potatoes, peeled and chopped 900g
Butter 115g
Milk 125ml
  
To serve
Frozen peas 150g
Butter 50g
Cooking Method
Step 01
Heat half the oil in a large pan, cook onions until soft, then set aside.
Step 02
Add remaining oil to the pan, fry the minced beef until browned.
Step 03
Stir in cooked onions, tomato purée, and flour; cook for 1 minute.
Step 04
Add red wine, thyme, and stock, then simmer for 45 minutes. Season and add Worcestershire sauce.
Step 05
Boil potatoes until tender, drain, then mash with butter and milk. Season.
Step 06
Preheat the grill. Place meat filling in a baking dish, top with mash, and grill until golden.
Step 07
Boil peas, drain, and toss with butter.
Step 08
Serve the cottage pie with peas.
