Ingredients
Spaghetti 340g
Shepard avocados 2
Garlic clove 1
Fresh parsley 1/4 cup
Heavy cream 2 tbsp
Lemon juice 1 tbsp
Grated parmesan 1/2 cup
Kosher salt To taste
Ground black pepper To taste
Cooking Method
Alfredo Sauce
Step 01 Unpit and scoop the avocados, then continue to chop the garlic.
Step 02 In a blender, combine avocado, garlic, parsley, heavy cream, lemon juice, and parmesan.
Step 03 Season with salt and pepper. Add 1 ¼ cup of water and pulse until it has a smooth consistency.
Pasta
Step 01 In a pot, boil the spaghetti and reserve ½ cup of pasta water.
Step 02 In a large skillet, add in the alfredo sauce with the spaghetti.
Step 03 Add 1/4 cup reserved pasta water. Heat until warm, adding more pasta water if necessary.
Step 04 Serve with extra grated parmesan or black pepper.
