Boneless, Skinless Chicken Breasts (large) 2
Yellow Onion (small) 1
Garlic Cloves 3
Drained Oil-Packed Sun-Dried Tomatoes 1/2 cup
Parmesan Cheese 1/2 cup
Salt 1 1/2 tsp
Freshly Ground Black Pepper 1/2 tsp
Olive Oil 2–3 tbsp
Dried Italian Seasoning 2 tsp
Baby Spinach 5 cups
Heavy Cream 1 1/4 cups
Cooking Method
Step 01
Dice the onion, garlic cloves and sun-dried tomatoes.
Step 02
Halve 2 chicken breasts horizontally and season with 1 tsp salt and 1/2 tsp pepper.
Step 03
Heat 1 tbsp olive oil in a skillet over medium-high heat. Brown half the chicken for 3–5 minutes per side, then set aside. Repeat with another tbsp of oil and the remaining chicken.
Step 04
Reduce to medium heat. Cook onions, garlic, sun-dried tomatoes and 2 tsp Italian seasoning. Add baby spinach in batches.
Step 05
Stir in the Parmesan, heavy cream and 1/2 tsp salt. Simmer and scrape up any browned bits.
Step 06
Return the chicken and juices to the pan. Simmer gently until fully cooked through (165ºF), about 4–7 minutes.
