Chicken Roulade with Spinach

Are you ready to roll? Try this fancy but easy-to-prepare chicken dish for your next party.

Ingredients
Olive oil
2 tbsp
Baby spinach
1 bag
Garlic, minced
2 cloves
A pinch of red pepper flakes
1
Feta cheese
3 tbsp
Parsley, minced
3 tbsp
Green onions, sliced
2 tbsp
Chicken breasts, butterflied and flattened

Unsalted butter
1 tbsp
Salt and pepper
To taste
Hot pepper or red chillies, sliced

Cooking Method

Step 01

Preheat oven to 200°C.
Step 02
Heat 1 tablespoon olive oil in skillet. Add pepper flakes and garlic, and cook for 30 seconds.
Step 03
Add the bag of baby spinach and toss to coat for 3 minutes. Remove from the skillet to let it cool.
Step 04
Roughly chop the spinach, and stir in the feta cheese and parsley, together with the green onion tops. Add salt and pepper.
Step 05
Butterfly and flatten the chicken breast
Step 06
Lightly salt the chicken breasts and add pepper.
Step 07
Scoop up the spinach mixture onto chicken breasts and roll it up, securing it with toothpicks. Repeat for the other pieces.
Step 08
In the same skillet, add 1 tablespoon of olive oil and butter, add the roulades and brown the sides for 3-4 minutes.
Step 09
Place the pan in oven for another 25 minutes.
Step 10
Let it rest for 5 minutes before slicing.
