Baked Asparagus with Crumbs

A deliciously quick side dish topped with breadcrumbs!

Ingredients
Trimmed asparagus
500g
Olive oil
2 tsp
Salt
½ tsp
Black pepper
½ tsp
Breadcrumbs
¼ cup
Panko
¼ cup
Garlic powder
½ tsp
Grated parmesan cheese
¼ cup
Beaten eggs
2 (large)
Cooking Method

Step 01

Preheat oven to 250°C. Line a baking sheet with aluminium foil and non-stick spray.
Step 02
In a large bowl, combine panko and parmesan cheese.
Step 03
Season with salt and pepper, and set it aside.
Step 04
Working in batches, coat asparagus in flour, then dip into eggs and finally into the panko mixture.
Step 05
Place asparagus onto baking sheet and bake for 10-12 minutes or until golden brown.
Step 06
Serve immediately.


For a non-vegetarian version, top the roasted asparagus with an over-easy or poached egg and sprinkle with prosciutto bits.
