Stir-Fried Chicken with Mushrooms

Tender chicken and mushrooms in a savoury, garlicky sauce. Best enjoyed with steamed rice, anytime.

Ingredients
Chicken Breast or Thighs 300g
Shiitake, Button or Oyster Mushrooms, sliced 150g
Garlic, minced 2 cloves
Oyster Sauce 1 tbsp
Soy Sauce 1 tbsp
Sesame Oil 1 tsp
Cornstarch (mixed with 2 tsp water) 1 tbsp
Cooking Oil 2 tbsp
Cooking Method
Step 01
Marinate chicken with soy sauce, a bit of cornstarch and sesame oil for 10–15 minutes.
Step 02
Heat cooking oil in a wok or pan then sauté garlic until fragrant.
Step 03
Add chicken and stir-fry until almost cooked.
Step 04
Toss in mushrooms and continue to cook until tender.
Step 05
Stir in oyster sauce and a splash of water or stock if needed.
Step 06
Pour in cornstarch mixture to slightly thicken the sauce.
Step 07
Serve hot with steamed rice.
