Ingredients
NORWEGIAN Air-flown Salmon/Trout Fillets,
skinless (approx. 180g each)

Cooking Oil Spray As needed
For Marinade
Fresh Ginger, finely grated 1 tsp
Garlic Clove, crushed 1
Soy Sauce 1 tbsp
Oyster Sauce 2 tbsp
Sweet Chilli Sauce 2 tbsp
To Serve (optional)
Steamed Rice As desired
Steamed Kailan As desired
Sesame Seeds For garnish
Scallions or Shallots, finely sliced For garnish
Cooking Method
Step 01
In a shallow bowl, combine all marinade ingredients. Add the salmon fillets and turn to coat evenly. Cover and marinate for at least 30 minutes or up to overnight for deeper flavour.
Step 02
Preheat the grill or broiler on high, positioning the rack approximately 25cm from the heat source.
Step 03
Place the marinated salmon on a baking tray. Lightly dab the glaze onto the salmon, allowing only the marinade that adheres to coat the surface. Avoid pouring excess sauce to prevent burning.
Step 04
Grill for 7 minutes, then remove and lightly spray the salmon with cooking oil. Return to the grill and cook for another 1–3 minutes until the surface is caramelised and the salmon flakes easily.
Step 05
Remove from heat and garnish with sesame seeds and sliced scallions. Serve warm with steamed rice and kailan.
