Ingredients
For the sambal
Dried red chilies, soaked and blended 5
Fresh red chilies 3
Shallots 3
Garlic cloves 2
Cooking oil 1 tbsp
Tamarind paste 1 tbsp
Sugar 1 tsp
Salt To taste
For the bowl
Cooked rice 2 cups
Ripe avocados, sliced 2
Cucumber, sliced 1 cup
Cherry tomatoes, halved 1/2 cup
Boiled eggs, halved 2
Soy sauce (optional) 1 tbsp
Fresh coriander or spring onions, chopped
Cooking Method
Step 01
In a blender, combine dried chilies, fresh chilies, shallots and garlic. Blend into a smooth paste.
Step 02
Heat cooking oil in a pan over medium heat. Add the blended paste and cook for 5 to 7 minutes until fragrant and slightly thickened.
Step 03
Stir in tamarind paste, sugar and salt. Cook for another 2 to 3 minutes, then set aside.
Step 04
Prepare serving bowls with a base of warm rice. Arrange sliced avocado, cucumber, cherry tomatoes and boiled eggs on top.
Step 05
Spoon the sambal over the bowl and drizzle with a little soy sauce if desired.
Step 06
Garnish with fresh herbs and serve immediately.
