Grilled Prawns with Stuffed Chutney

Ingredients
For the Prawns
Large Prawns 500g
Lemon Juice 1 tsp
Salt ½ tsp
Turmeric Powder ½ tsp
Oil or Melted Butter 1 tbsp
For the Chutney Filling
Fresh Coriander Leaves 1 cup
Mint Leaves ½ cup
Green Chilies 2–3
Garlic Cloves 2
Grated Coconut or Yogurt 1 tbsp
Salt To taste
Cooking Method
Step 01
Make the chutney filling: Blend coriander, mint, green chilies, ginger, lemon juice, yogurt and salt into a thick paste.
Step 02
Prep the prawns: Make a slit along the back of each prawn and gently open it. Stuff the chutney inside each prawn.
Step 03
Brush the outside: Brush the prawns with lemon juice, salt, turmeric and a bit of oil to give them colour.
Step 04
Preheat the grill or pan: Set to medium heat.
Step 05
Grill the prawns: Cook for 2–3 minutes per side, until lightly charred.
Step 06
Serve: Arrange the prawns on a plate, drizzle with the leftover chutney and garnish with mint leaves.
