Ingredients
Pumpkin (medium) 1
Prawns, peeled and deveined 300g
Garlic, minced 2 cloves
Tomato, chopped 1 small
Coconut Milk 100 ml
Olive Oil 1 tbsp
Paprika 1 tsp
Chili Flakes 1 tsp
Salt & Pepper To taste
Cooking Method
Step 01
Wash the pumpkin, cut off the top to create a lid, and scoop out seeds and fibers. Set aside.
Step 02
Heat olive oil in a pan over medium heat.
Step 03
Sauté onion and garlic until fragrant.
Step 04
Add tomato, spices and shrimp, cook until shrimp turns pink, then stir in coconut milk and heat through. Remove from heat.
Step 05
Spoon the shrimp mixture into the hollow pumpkin.
Step 06
Cover with the pumpkin lid.
Step 07
Place the stuffed pumpkin in a baking dish with a little water at the bottom.
Step 08
Bake for 35–40 minutes or until the pumpkin flesh is tender when pierced with a fork.
Step 09
Slice and serve, scooping both the roasted pumpkin and the shrimp filling together.
