Thai-style Beef Salad

Begin your healthy eating journey with this flavourful meat lovers’ salad recipe.

Ingredients
Rump steak
300g
Groundnut oil
2 tsp
Lime, juiced
1
Red chilli, sliced
1
Brown sugar
1 tsp
Baby leaf salad
85g
Beansprouts
140g
Red grapes, halved (optional)

Cooking Method

Step 01

Rub steak with 1 teaspoon oil to season.
Step 02
Fry in a hot pan for 2-3 minutes each side, until it’s medium rare.
Step 03
Transfer to a plate, cover with foil loosely and let it rest for 5 minutes.
Step 04
Make the dressing by mixing lime juice, chilli, sugar and remainder oil. Mix until sugar dissolves.
Step 05
Divide salad leaves, bean sprouts and grapes between serving bowls.
Step 06
Thinly slice steak and add the juices to the dressing.
Step 07
Toss them together and serve.


This recipe can be served room temperature and it works well with grilled chicken or lamb too!
