Ingredients
White Prawns, raw, peeled and deveined 500g
Vegetable or Canola Oil 1.5 tbsp
Toasted Sesame Oil 1 tsp
Garlic Cloves, very finely minced 3
Fresh Ginger, grated (optional) 2 tsp
Chilli Flakes 1 tsp
Water 1/2 cup (125ml)
Sriracha 3 tbsp
Light Soy Sauce 2 tsp
Brown Sugar (or White Sugar) 3 tbsp
To Garnish (optional)
Sesame Seeds As desired
Spring Onions, finely sliced As desired
Fresh Red Chilli, sliced As desired
Cooking Method
Step 01
Heat vegetable oil in a large pan over high heat. Add half the prawns and sear for about 45 seconds on each side until lightly golden. Remove and set aside. Repeat with remaining prawns.
Step 02
Remove the pan from heat briefly to cool slightly, then reduce heat to medium. Add sesame oil to the pan.
Step 03
Add garlic, ginger and chilli flakes. Cook until fragrant and the garlic turns lightly golden.
Step 04
Pour in the water, followed by sriracha, soy sauce and sugar. Stir well, increase heat to medium-high and simmer for about 3 minutes until the sauce thickens to a light, syrupy consistency.
Step 05
Return the prawns to the pan and toss to coat evenly in the sauce. Cook for 1–2 minutes until the prawns are heated through and the sauce clings beautifully.
Step 06
Garnish with sesame seeds, spring onions and fresh chilli if desired. Serve immediately with steamed rice to soak up the sauce.
