Ingredients
Medium Cauliflower, cut into bite-sized florets 1
Cherry Tomatoes, halved 1 cup
Cucumber, diced ½ cup
Kalamata Olives, sliced ¼ cup
Feta Cheese, crumbled ¼ cup
Red Onion, thinly sliced 2 tbsp
Extra Virgin Olive Oil 2 tbsp
Juice of 1 Lemon
Cooking Method
Step 01
Boil the cauliflower for 2–4 minutes until tender-crisp. Drain and let it cool for a while.
Step 02
In a large bowl, combine cauliflower, tomatoes, cucumber, olives and feta cheese.
Step 03
Drizzle with olive oil and lemon juice, then toss gently.
Step 04
Enjoy as a fresh, light side or main salad.
