Ingredients

Vegetable Oil 1 tbsp
Banana 2
Lemongrass Stalk 1
Garlic Cloves 2
Galangal 5
Thai Chilies 1 - 2
Coriander 10g
Thai Red Curry Paste 1 tbsp
Coconut Milk 400ml
Chicken Stock 400ml
Chicken Breast 2
Lime Leaves 2
White Mushrooms 300g
Cooking Method
Step 01
Heat oil in a large, deep saucepan over medium-high heat. Add shallots, lemongrass, garlic, galangal, chilies, coriander stalks, and curry paste. Cook for 1 - 2 minutes, stirring often until fragrant.
Step 02
Pour in the coconut milk and stock, then stir well to release any browned bits at the bottom of the pan.
Step 03
Let the mixture simmer for 10 - 15 minutes, allowing the flavors to meld together.
Step 04
Stir in the chicken pieces and lime leaves. Bring to a gentle simmer and cook for 10 minutes, ensuring the chicken is fully cooked.
Step 05
Add the mushrooms to the saucepan during the last 5 minutes of cooking.
Step 06
Stir in the fish sauce and sugar, then add lime juice to taste. Serve warm and enjoy!
