Save the day with this simple but succulent, aromatic roast chicken recipe!

Ingredients
Whole chicken
1
Unsalted butter
70-90g
Coarse salt and black pepper
To taste
Avocado oil
2 tbsp
Cooking Method

Step 01

Preheat oven to 230°C.
Step 02
Rinse the chicken and pat it dry with paper towels, inside and out.
Step 03
Salt and pepper the cavity, truss the chicken, tie up the wings and legs to keep it moist.
Step 04
Place chicken on a roasting pan, roast it for 1 hour.
Step 05
Remove it from the oven. Baste the chicken and let it rest for 15 minutes on cutting board.
Step 06
Remove twine and cut the chicken into pieces.
Step 07
Brush the meat with fresh butter, and serve it.
Step 08
Drizzle avocado oil and season with salt and pepper.


Coating the chicken skin with enough salt will result in crisp, salty and flavourful skin.
