Roasted Chicken on a Bed of Vegetables

Ingredients
Chicken parts (drumsticks or wings)
900g
Mix of vegetables (onions, garlic, carrots,
celery, potatoes and broccoli)
1 large bowl
Olive oil
5 tbsp
Balsamic vinegar
2 tbsp
Salt and pepper
To taste
Fresh parsley, chopped
1
Dried herbs (thyme, rosemary, oregano)
1 packet each
Cooking Method

Step 01

Heat the oven to 220℃.
Step 02
Wash and prep the vegetables, and cut them into bite-sizes.
Step 03
Make a bed for the chicken pieces, arranging the vegetables at the bottom of the baking tray.
Step 04
Sprinkle olive oil, balsamic vinegar with salt, pepper and herbs.
Step 05
Rub the chicken drumsticks and wings with olive oil.
Step 06
Sprinkle the salt and place it into the baking tray.
Step 07
Bake for an hour, and serve together with the platter.
