Crispy Honey Prawns are the perfect treat to add a touch of sweetness and crunch to your Chinese New Year celebrations! Golden, crispy prawns coated in a rich honey sauce symbolise good fortune and happiness in the year ahead.

Ingredients

Prawns (peeled with tail on) 300g/10oz
Prawns (whole unpeeled) 600g/1.2lb
Salt 1/2 tsp
Cornflour (For dredging) 1/2 cup
Cornflour (For ultra-crispy fry batter) 9 tbsp
Plain/All-purpose Flour 6 tbsp
Baking Powder 1/2 tsp
Salt (Kosher/Cooking) 1/2 tsp
Cold Soda Water/Club Soda/Seltzer Water 2/3 cup + 1 tbsp
Vegetable or Canola Oil (For frying, ~4cm/1.5" depth in a pot) 3-4 cups
Honey 1/3 cup (100g)
Glucose or Corn Syrup (Light) 1.5 tbsp (25g)
Light Soy Sauce (or All-purpose) 1 tbsp
Chinese Cooking Wine (or Mirin) 2 tsp
Cooking Method
Step 01
Prepare Prawns: Season prawns with salt and coat each in cornflour/cornstarch. Set aside on a plate.
Step 02
Chill Dry Ingredients: Mix flour, cornflour/cornstarch, baking powder, and salt. Chill in the fridge.
Step 03
Heat Oil: Heat 4cm of oil in a pot to 160°C/320°F over medium-high heat.
Step 04
Make Batter: Add soda water to chilled dry ingredients, whisk lightly to combine. Adjust thickness with extra soda water if needed.
Step 05
Coat and Fry #1: Dip prawns in batter, letting excess drip off. Fry in batches for 3 minutes until light golden and crispy.
Step 06
Cool Prawns: Drain cooked prawns on paper towels. Let cool for 20 minutes.
Step 07
Make Honey Sauce: Simmer honey sauce ingredients for 3 minutes, until syrupy. Keep warm.
Step 08
Fry #2 & Serve: Heat oil to 200°C/390°F. Fry prawns for another 3 minutes until golden. Toss in honey sauce and serve with garnishes.
