Ingredients
For the bruschetta topping
Snacking cherry tomatoes, halved 200g
Garlic cloves, minced 2
Extra virgin olive oil 2 tbsp
Balsamic vinegar 1 tbsp
Salt and black pepper To taste
Fresh basil leaves, chopped
For the cheese topping
Fresh mozzarella or cream cheese 150g
Grated parmesan (optional) 2 tbsp
For the base
Baguette or rustic bread, sliced 1
Olive oil 2 tbsp
Cooking Method
Step 01
Preheat oven to 200°C. Arrange sliced bread on a baking tray and brush lightly with olive oil. Toast for 8 to 10 minutes until crisp and lightly golden.
Step 02
In a bowl, combine snacking cherry tomatoes, minced garlic, olive oil and balsamic vinegar. Season with salt and black pepper, then gently mix. Add chopped basil and set aside to marinate for a few minutes.
Step 03
Spread a layer of mozzarella or cream cheese over each toasted bread slice while still warm.
Step 04
Spoon the tomato mixture generously over the cheese. Finish with a sprinkle of grated parmesan if desired.
Step 05
Serve immediately while the bread is crisp and the topping is fresh.
