Ingredients
Pasta of your choice 200g
White button mushrooms, sliced 150g
Unsalted butter 3 tbsp
Olive oil 1 tbsp
Garlic cloves, finely minced 4
Yellow onion 1/2
Grated Parmesan cheese 40g
Dried thyme leaves 1/2 tsp
Salt and freshly ground black pepper To taste
Chopped parsley, extra Parmesan (optional garnish)
Cooking Method
Step 01
Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve about 1/2 cup of pasta water before draining.
Step 02
Heat olive oil in a pan over medium-high heat. Stir and cook the mushrooms until golden and evenly cooked.
Step 03
Add butter, onions and thyme. Sauté until fragrant and softened for about 2–3 minutes. Stir in garlic and cook for another 30 seconds.
Step 04
Add a splash of reserved pasta water and stir to emulsify the butter into the sauce. Season with salt and black pepper.
Step 05
Toss in the cooked pasta and mix well to coat.
Step 06
Plate the pasta and top with parmesan cheese.
