Lemon Rice

A tangy South Indian twist to weeknight meals!

Ingredients
Extra virgin olive oil
1 tbsp
Ginger, minced
½ tbsp
Dhal
½ tbsp
Dhal

Mustard seeds
½ tsp
Raw cashew nuts
12 pieces
Raw peanuts
2 tbsp
Curry leaves
1 sprig
Turmeric powder
¼ tsp
Cooked rice
5 ½ cups
Salt
¼ tsp
Lemon juice
4 tbsp
Cilantro
2 tbsp
Cooking Method

Step 01

Heat oil in a saucepan over high heat for 15 seconds. Reduce the heat to medium and add ginger, dhal, dried chillies, mustard seeds, cashew nuts and peanuts.
Step 02
Sauté until the dhal turns light brown. Add curry leaves and turmeric.
Step 03
Mix in cooked rice, salt and lemon juice. Stir until everything is well-combined.
Step 04
Garnish the plate with cilantro before serving.


This dish works great with a side curry or chutney.
