Ingredients
Chicken Breasts (grilled as before with olive oil, lemon, garlic, herbs) 2
Carnaroli Rice 1 cup
Warm Chicken Broth (kept on low heat) 3 cups
Onion or Shallot, finely chopped 1 small
Garlic, minced 2 cloves
Olive Oil or Butter 2 tbsp
White Wine (optional) ½ cup
Parmesan Cheese, grated ½ cup
Spinach, roughly chopped 2 cups
Salt & Pepper
Cooking Method
Step 01
Grill the Chicken:
Season with olive oil, garlic, lemon, Italian herbs, salt & pepper.
Grill until golden, let rest, then slice.
Step 02
Cook the Risotto:
Heat olive oil/butter in a pan, sauté onion & garlic until soft.
Add Carnaroli rice, toast for 1–2 minutes.
Deglaze with white wine (optional).
Gradually add warm chicken broth, one ladle at a time, stirring until absorbed before adding the next.
Continue 18–20 minutes until creamy and al dente.
Step 03
Finish the Risotto:
Stir in spinach until wilted.
Add Parmesan, adjust seasoning.
Step 04
Assemble:
Plate the risotto, top with sliced grilled chicken.
Garnish with fresh herbs or lemon zest.
