Ingredients
Sunflower oil
1 cup
Garlic cloves, minced

Parsley, chopped

Basil, chopped
2 tbsp
Lemons, zest and juiced

Clams
350g
Scallops in the half shell

Mussels
250g
Fresh tiger prawns

Ripe avocados, peeled and chopped

Cup thickened cream
½
Mayonnaise
200ml
Lime zest
1 tbsp
Sweet chili sauce
1 tbsp
Tomato sauce
1 tbsp
Cooking Method

Step 01

Combine the oil, garlic, basil, lemon juice and zest in a bowl, then season.
Step 02
Brush the marinade over the seafood.
Step 03
Heat a barbecue hotplate to medium-high.
Step 04
Cook the seafood making sure all the clams and mussels are open and the meat for prawns and scallops are opaque.
Step 05
Place all onto a platter and serve it with parsley, avocado and seafood sauces.
Step 06
For the avocado cream: Blitz all the ingredients until smooth. Season with salt and pepper to taste.
Step 07
Repeat process with the seafood sauce, by blitzing and seasoning before serving.


Place shells like mussels and clams directly on the hottest part of the grill and they should be ready within 5 minutes.
