Easy Chicken Curry

Make this festive season extra fiery and extra memorable with our take on the classic Indian Chicken Curry! Don’t let the name intimidate you, this dish takes only a couple of simple steps and ingredients.

Ingredients
Chicken, cut into parts 500g
Cooking oil
Red onions, chopped 3 medium
Green chillies 2
Ginger paste 1 tbsp
Garlic, minced 3 cloves
Tomatoes, finely chopped 2
Yogurt ¼ cup
Salt to season
Hot water 1 cup
Coriander leaves, finely chopped
Curry powder 2 tbsp
Curry leaves 1 sprig
Cloves 4
Cinnamon 1
Green cardamom seeds 3


Cooking Method

Step 01
In a large pot, heat oil on a medium flame. Add curry leaves, cinnamon, cloves, and cardamom seeds. Stir for a few seconds before adding in the onions and chillies. Saute for 7-8 minutes. Then, add ginger and garlic. Saute until fragrant, for about a minute.
Step 02
Add tomatoes and salt. Mix well and cook until tomatoes turn soft and mushy.
Step 03
Turn the heat down to low. Slowly stir in the yogurt and curry powder. Cook until aromatic.
Step 04
Add chicken and coriander leaves. Fry on medium heat until the chicken turns pale in colour. Cover and cook on low heat for about 5 minutes.
Step 05
Remove the lid and slowly pour ½ cup of hot water. Add until the desired consistency is reached. Cover the pot again and cook on medium heat until chicken is tender and gravy becomes thick.
Step 06
Add more salt and curry powder if needed.
Step 07
Serve with fluffy rice. Enjoy!
