Ingredients
For the crust
Digestive biscuits, crushed 180g
Unsalted butter, melted 80g
Granulated sugar 25g
For the topping
Fresh blueberries 150g
Whipped cream For serving
Extra lemon zest or lemon slices For garnish
For the lemon filling
Fresh lemon juice 240ml
Lemon zest 1 tbsp
Large egg yolks 4
Sweetened condensed milk 1 can
Heavy cream 120ml
Cooking Method
Step 01
In a bowl, combine crushed digestive biscuits, melted butter and sugar. Mix until the texture resembles wet sand. Press the mixture firmly into the base and sides of a tart pan.
Step 02
Chill in the refrigerator for 20–30 minutes until firm.
Step 03
Meanwhile, prepare the filling. In a mixing bowl, whisk together lemon juice, lemon zest, egg yolks and sweetened condensed milk until smooth and creamy.
Step 04
Fold in the heavy cream and mix until fully combined.
Step 05
Pour the filling into the chilled tart crust and smooth the surface evenly. Bake in a preheated oven at 180°C for 15–18 minutes, just until the filling is set but still slightly wobbly in the center.
Step 06
Remove from the oven and allow the tart to cool completely. Transfer to the refrigerator and chill for at least 4 hours or overnight for the best texture.
Step 07
Before serving, top with fresh blueberries, whipped cream and extra lemon zest or lemon slices for a fresh citrus finish.
