Dragon Fruit Mousse Cake

Ingredients
For the Dragon Fruit Mousse
Large dragon fruit, peeled and diced (reserve some for garnish) 1
Cream cheese, softened 250g
Caster sugar 1/2 cup
Vanilla extract 1 tsp
Whipping cream 250ml
Gelatine powder 2 tsp
Warm water 3 tbsp
For the Biscuit Base
Graham crackers or digestive biscuits, crushed 200g
Unsalted butter, melted 90g
For the Dragon Fruit Glaze
Dragon fruit purée 1/2 cup
Caster sugar 2 tbsp
Gelatine powder 1 tsp
Warm water 2 tbsp
Cooking Method
Step 01
Combine the crushed biscuits with the melted butter until evenly coated. Press the mixture firmly into the base of a 20cm springform cake tin. Refrigerate for 20–30 minutes until set.
Step 02
Blend half of the dragon fruit into a smooth purée and dice the remaining flesh into small cubes.
Step 03
Dissolve the gelatine for the mousse in the warm water and allow it to cool slightly.
Step 04
Beat the cream cheese, caster sugar and vanilla extract until smooth and creamy. Mix in the dragon fruit purée.
Step 05
In a separate bowl, whip the cream to soft peaks, then gently fold it into the cream cheese mixture. Stir in the dissolved gelatine until fully incorporated before folding in the diced dragon fruit.
Step 06
Pour the mousse over the chilled biscuit base and smooth the surface. Refrigerate for at least 4 hours, or until firmly set.
Step 07
For the glaze, combine the dragon fruit purée and caster sugar. Dissolve the gelatine in warm water, stir it into the purée mixture and allow it to cool slightly.
Step 08
Pour the glaze evenly over the chilled mousse cake and refrigerate for another 1–2 hours until set.
Step 09
Carefully remove the cake from the tin and garnish with extra dragon fruit cubes before serving.
