Ingredients
Cake Batter
Unsalted butter (softened) 120g
Sugar 120g
Eggs 2
Vanilla 1 tsp
Flour 180g
Baking powder 1 ½ tsp
Salt Pinch
Milk 80ml
Shine Muscat grapes, halved 150g
Streusel Topping
Flour 60g
Brown sugar 40g
Cold butter, cubed 40g
Cooking Method
Step 01
Preheat your oven to 170°C. Grease and line a baking pan with baking paper.
Step 02
In a mixing bowl, beat the softened butter and sugar together until light and fluffy.
Step 03
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 04
In a separate bowl, mix together flour, baking powder and salt.
Step 05
Add the dry ingredients into the butter mixture in batches, alternating with milk. Mix until smooth and well combined (do not overmix).
Step 06
Gently fold in half of the halved grapes into the batter.
Step 07
In a small bowl, combine flour, brown sugar and cold butter. Rub together using your fingertips until the mixture becomes crumbly.
Step 08
Pour the batter into the prepared pan. Scatter the remaining grapes on top, then evenly sprinkle the streusel over the surface.
Step 09
Bake for 35–45 minutes, or until the top is golden brown and a skewer inserted in the centre comes out clean.
Step 10
Allow the cake to cool slightly before slicing. Serve warm or at room temperature.
