Ingredients
For the dough
Warm milk 250ml
Active dry yeast 2 ¼ tsp
Granulated sugar 50g
Large egg + egg yolk 1 + 1
Unsalted butter, melted 60g
Salt 1/2 tsp
All-purpose flour 350–400g

For the cinnamon sugar
Brown sugar 80g
Ground cinnamon 1 ½ tbsp

For the apple filling
Rockit apples, peeled and finely chopped 2
Unsalted butter 30g
Brown sugar 50g
Ground cinnamon 1 tsp
Ground nutmeg (optional) 1/2 tsp
Cornstarch 1 tsp

For the glaze
Icing sugar 120g
Milk 2–3 tbsp
Vanilla extract 1/2 tsp
Cooking Method
Step 01
In a bowl, combine warm milk, yeast and sugar. Let it sit for 5–10 minutes until foamy. Add the egg, egg yolk, melted butter and salt, then mix well.
Step 02
Gradually add flour and mix until a soft dough forms. Knead for about 8–10 minutes until smooth and elastic. Transfer to a lightly greased bowl, cover and let it rise for 1 to 1.5 hours or until doubled in size.
Step 03
Meanwhile, prepare the apple filling. In a pan over medium heat, melt butter and add chopped apples. Cook for 5–7 minutes until slightly softened. Stir in brown sugar, cinnamon, nutmeg and cornstarch. Cook for another 2–3 minutes until thickened. Set aside to cool.
Step 04
In a small bowl, mix brown sugar and cinnamon for the swirl.
Step 05
Once the dough has risen, roll it out on a floured surface into a rectangle. Spread the cinnamon sugar evenly over the dough, followed by the cooled apple filling.
Step 06
Roll the dough tightly into a log and slice into 9–12 pieces. Arrange them in a greased baking dish, cover and let rise again for 30–45 minutes.
Step 07
Bake in a preheated oven at 180°C for 25–30 minutes until golden brown.
Step 08
While still warm, prepare the glaze by mixing icing sugar, milk and vanilla extract until smooth. Drizzle over the rolls before serving.
